Tsukune:
- 3 mini country-style breads
- 100 g minced chicken breast
- 100 g minced chicken thigh
- 10 g rice alcohol
- Chopped fresh ginger
- Chopped fresh leeks
- 100 g tofu
- 6 g truffle oil
- Salt/Pepper
Tare sauce:
- 14 g sugar
- 10 g Mirin
- 10 g soy sauce
- 110 g rice alcohol
Preparation steps
- Cut 12 half-slices of bread and put it into the Tsukune mix.
- Leave the mixture to rest for 1 hour in the refrigerator.
- Make small balls of 30 g tightly wrapped around the half-slices of bread.
- Cook the balls in a frying pan and put them on a skewer three at a time.
- Finish cooking on a grill and brush with Tare sauce.
