Tsukune:

  • 3 mini country-style breads
  • 100 g minced chicken breast
  • 100 g minced chicken thigh
  • 10 g rice alcohol
  • Chopped fresh ginger
  • Chopped fresh leeks
  • 100 g tofu
  • 6 g truffle oil
  • Salt/Pepper

Tare sauce:

  • 14 g sugar
  • 10 g Mirin
  • 10 g soy sauce
  • 110 g rice alcohol

  • Cut 12 half-slices of bread and put it into the Tsukune mix.
  • Leave the mixture to rest for 1 hour in the refrigerator.
  • Make small balls of 30 g tightly wrapped around the half-slices of bread.
  • Cook the balls in a frying pan and put them on a skewer three at a time.
  • Finish cooking on a grill and brush with Tare sauce.
